Since my profile was written in early 2015 there have been quite a few developments. Besides repeating as the Midwest Homebrewer of the Year & High Plains Brewer of the Year, I was lucky enough to win the 2014 Masters Championship of Amateur Brewing (MCAB) Grand Champion Award, held in April 2015, as well as the Sam Adams Longshot Competition with my Raspberry Berliner Weisse. People used to ask me all the time, "Tim, when are you going to open up a brewery?" To which I would answer "why would I want to screw up a perfectly good hobby and turn it into a job?" Now that I've thought about it a bit more, I've come to realize that my thirst for creating and sharing beer is no longer able to be quenched 5 gallons at a time, I need to follow my passion in life and turn it up to the next level. I'm happy to report, construction is happening right now! In November I left my job of 18 years to start Boiler Brewing Company, located in the historic Grand Manse Building in my hometown, Lincoln, Nebraska. The Grand Manse is the former Federal Courthouse and Post Office building, built in 1904. Our tap room will comfortably seat 90 people. We have an Alpha Brewing Operations automated 10 barrel 2 vessel steam brewhouse. And by automated I mean iPad enabled controls and monitoring, we will still hump bags of grain by hand and clean out the mash with a shovel. We are starting with nine 10 BBL fermenters and two 10 BBL brite tanks, with room to expand. We also have a 1 BBL pilot system with five 2BBL fermenters. Since we have the 1 BBL pilot system, it will be a lot of fun keeping new and experimental beers coming out on a regular basis. I will be able to use some crazy and fun local ingredients at 1BBL scale that would likely be impractical at 10BBL or larger. Stop down and see me for a beer sometime. |
